The Chicks

The summer of 2013, Malaka approached her bestie since high school, Erica, with a crazy idea: let's start a business! Our love for pastries and food led us into the kitchen and from then on we were Two Chicks in the Mix. It was that very summer where we baked Lavender Cake, which is a staple on our menu today. With roots in South LA, we intend to bring a new approach to bakeries in our community.

From sourcing California-made, organic ingredients to making everything from scratch, we aim to create an experience that feels and tastes thoughtfully and lovingly made. Our seasonal menu is inspired by California produce, unique flavor combinations, and Black food culture. We are devoted to delivering customer service that is human, friendly and attentive. We believe that your most special, celebratory moments in life deserve cake and we are so grateful to be a part of it.

Malaka Wilson-Greene / Oakland

I started baking when I was in graduate school at San Francisco State University studying Sexuality Studies. I used baking recipes I would find on popular food blogs as a way to distract myself from writing my graduate thesis. But I’ve always loved dessert!

Growing up in Los Angeles, my mother and I would drive all over scouting out the newest and best bakeries like the natural born food critics we are! At Two Chicks in the Mix, I’m responsible for recipe and menu development as well as the overall operations and direction of the business. I’m also a Scorpio who is a big sister to 3 amazing brothers!

I fell in love with baking as a teenager when I witnessed the instant joy it created amongst my loved ones. Two years after launching our company, I learned that my grandmother was a wedding cake baker in her hometown of Liberia, West Africa - so I guess it’s in my blood!

At Two Chicks in the Mix, I enjoy taking on the responsibility of executing our marketing campaigns as well as our financial plans. Occasionally, I find myself waking up with a new idea to market our brand or a fun way to interact with our audience. . As a true Sag, I’m a big dreamer who’s always looking for the silver lining.

Sourcing Our Ingredients

“Unique Ingredients, Done Right!” is our slogan because we love fun and fresh flavors. We are lucky to be based in California, where there is not only a bounty of beautiful and delicious produce, but also a commitment to use food and ingredients as a way to preserve and protect our environmental and social ecosystems. In addition to organic flours and organic sugars, read below for how we source just some of the ingredients we use to make the best desserts and pastries.

Produce

Being in California means the produce game is unmatched! We take pride in being born and raised in California and that is a big part of what we bring to our customers. We love to source fresh, ripe, organic fruit from our local Farmers’ Markets. Our favorite in Oakland is the Temescal Farmers’ Market and in Los Angeles, the Echo Park Farmers’ Market.

Chocolate & Cocoa Powder

We love chocolate and we know you do too! Our Darkest Chocolate cake is one of our best sellers! Chocolate is an industry fraught with human rights abuses Which is why we source from Guittard, who produces Fair Trade chocolate.

Herbs, Spices, Flours, & Sugars

We love supporting other California based businesses because we believe we are stronger together. This is why we purchase many of our herbs and spices from one of our favorite local shops, Oaktown Spice Shop! Oaktown Spice Shop was one of the first businesses that we partnered with to host pop ups and pie workshops and we love being able to source our spices from them.

Organic flours and sugars make up the bulk of our ingredients, which is why we source them from the best places! Our flours come from Janie’s Mill, a family run farm using regenerative planting and harvesting practices. Wholesome makes our Cane and Brown Sugars and they are always fair trade and always vegan.

Dairy, Eggs, & Olive Oil

We use Darigold heavy cream and butter to make our recipes super moist, delicious, and buttery! Darigold is our brand of choice to use in our cakes, pies and baked goods not only because of their superior product but also because of their commitment to innovate sustainable and environmentally friendly practices.

Our Lemon Olive Oil cake is made with the very best Extra Virgin Olive Oil from Séka Hills, which is owned and operated by the Yocha Dehe Wintun Nation, a Native American tribe which has lived in the Capay Valley, where the olives for this oil are grown, harvested, and milled, for thousands of years.

And of course couldn’t have a bakery without eggs! Our eggs are Pasture raised from Klinger Ranch!
